Dosage: enough for about 5-8kg of vegan substrate in optimal controlled fermentation conditions.
For all other productions (amateur, uncontrolled, etc.) it is recommended to use 0.5gr of product for every 500gr of vegan substrate.
The included measuring spoon corresponds to approximately 0.5gr so use 1 every 500gr.
Optimal temperature range for proliferation: 9 ° C – 11 ° C
We recommend to keep the product refrigerated (4-8°C and below 50% humidity) or frozen (-20 ° C).

Penicillium Roqueforti spores that are characterized for giving the product its typical green-blue color. Its high lipolytic activity leads to the production of free fatty acids, precursors of the characteristic flavor and aroma of blue cheeses.
We recommend to use it in combination with our Starter Cultures (mesophilic) and / or our Vegan Coltures (thermophilic).
