Dosage: enough for about 10kg of vegan substrate in optimal controlled fermentation conditions.
For all other productions (amateur, uncontrolled, etc.) it is recommended to use 1 measuring spoon every 500gr of substrate.
Optimal temperature range for proliferation: 9 ° C – 11 ° C
We recommend to keep the product refrigerated (4-8°C and below 50% humidity) or frozen (-20 ° C).

Spores of Penicillium Candiudum which are characterized by providing the cheaze with a white skin of medium thickness and density, proteolysis and lipolysis adapted to its rapid growth. It shows a high enzymatic activity, with good development of aromas and inhibition of unwanted contamination.
We recommend to use it in combination with our Starter Cultures (mesophilic) and / or our Vegan Coltures (thermophilic). We also recommend to use it with with our Geotrichum Candidum.
